Clementine Salsa

If you are looking for an alternative for the typical tomato salsa this clementine salsa is it.  Perfect for dipping tortilla chips, we also use it as a flavorful topping on chicken or fish.  It tastes just as great heated. If spicy isn't your thing simply omit the jalapeno and pepper flakes. It's great either way.

Clementine Salsa 

3 clementines, peeled, sectioned and chopped (about 1 cup)
1/2 red bell pepper, seeded and chopped (1/4 cup)
1/2 green bell pepper, seeded and chopped (1/4 cup)
1 garlic clove, minced
1 tsp seeded and chopped jalapeno
1/2 medium cucumber, peeled, seeded and chopped (1/4 cup)
2 tbsp lemon juice
1/2 tsp sugar
1/8 tsp crushed red pepper flakes

In a small bowl combine clementines, bell peppers, garlic, jalapeno, cucumber, lemon juice, sugar and red pepper flakes.  Cover and chill 30 minutes to blend flavors.  Serve at room temperature.
