Grilled Peaches

After seeing a few cooking shows whip up this light summer dessert thought I might see what it was all about.  Not being a huge fan of cooked\ fruit desserts must say I was happily surprised.

This grilled peach recipe makes for a delicious dessert or snack.  Not feeling like heating up the grill for one peach I actually broiled it in the oven.

My version is easy too.  Simply cut peach in half, drizzle with a little melted butter, sprinkle with a very small amount of cinnamon and brown sugar.  Then put it on non stick aluminum foil under the broil until it became brown on top.  Since I didn't have ice cream on hand I topped it with whipped cream.

  • 2 tablespoons light brown sugar
  • 1/2 teaspoon cinnamon
  • 4 fresh peaches
  • grapeseed oil (or vegetable oil)
  • vanilla ice cream

In a small bowl, combine brown sugar and cinnamon. Cut peaches along the seam all the way around and twist halves off the pit. Brush cut sides with grapeseed oil or vegetable oil. Cook, cut side down, on a hot grill until fruit has grill marks, 3 to 4 minutes. Brush tops with oil, turn over, and move to indirect heat. Sprinkle cut sides with cinnamon sugar. Cover grill and cook until sugar is melted and fruit is tender, 10 to 15 minutes. Serve with vanilla ice cream (sprinkle on extra cinnamon sugar if you like).
